... because I always have a hard time to guess how much bread - well, rolls, actually - we'll eat at any given time. So, in order to save the dry rests, we grind them and use them as breadcrumbs. I've been planning to do so for a week and a half, but I was too busy with Mum issues. Now we are the proud owners of two entire jars of lovely blonde breadcrumbs. Meaning that I can make Topfenknödel tomorrow.

I also went to Aldi to fill up the fridge in the morning, so I didn't have much time for anything else. By the time we've had lunch and Richterin Barbara Salesch is over, I'm usually too tired to do anything of import. So it was laying on my belly and reading/playing Solitaire on Methuselah the laptop.

Pinterest is still acting up. I hope they'll fix the glitch, soon.

Do you grind the bread in a food processor? How stale does the bread have to be before you grind it? I’m forever throwing away bread, so I’d like to use it rather than put it in the compost.

I don't have a food processor. I grind them by hand, using an ancient nut grinder. When bread has gone a bit stale, I cut it into pieces (into rings if it's rolls) and let them dry on a large tablet for at least 3-4 days.

I always buy too much bread too. I only use it for lunches, and I only buy small loaves, but I still end up throwing some away nearly every time. Even in the fridge, it goes stale eventually. That said, I don't do enough cooking to justify making breadcrumbs with it. Bread is about the only food that gets wasted in my home, so I try not to feel too guilty about throwing it away.

A great idea!
I made seasoned toasted bread cubes with our leftover holiday rolls:). For some reason, our guests decided to not eat dinner rolls and I had a lot leftover. We used them on salad and soup:)

We barely have bread which gets old enough to end up as bread crumbs! Then again, we very rarely have Schnitzel or Topfenknödel...

I make Topfenknödel every other week — soft food is good for Mum and we both like it anyway. Schnitzel is another matter entirely; I avoid the mess that goes with its preparation as long as I can.
