I've found this recipe on YouTube last night; Topfenknödel was immediately removed from the menu in exchange of give this a try:

Isn't it pretty? And, as hard as it is to believe, I've managed to make a traybake just as nice looking (not to mention extremely fluffy and yummy, especially with a teaspoon of apricot jam):



Other than that, we had laundry day, went with Mum for a walk, and I did a great deal of research into the 3rd season of "Charmed", as last night finally a dim twinkle of inspiration showed up on the horizon. Perhaps I'll manage to write something, soon... even if not in the stories that are currently on my to-do-list. *fingers crossed*

Oh damn this looks delicious! I'll have to take a closer look at this vid (we are making Sauerbraten today, though dunno if we can eat from it tonight since I'm having stomach troubles)

Awww, sorry to hear about the stomach troubles! Sauerbraten is very yummy, too. This traybake is quick and easy to make, not to mention fluffy and light and yummy, so I can suggest it with a good conscience.

Yeah, I watched the recipe and it is indeed very easy. And except for cottage cheese, all ingredients we always have at home anyway. So this is definitely one I'm planning to try.

I used Cremequark instead of cottage cheese, and it worked like a charm!

Exactly! I use Cremequark in many dishes that originally ask for something fancy and expensive. Like mascarpone, for one.

No name is given on the vid, but it is basically a Quark traybake — I used Sahnequark instead of the required cottage cheese, and it is terrific! Also, easy to make: it was done in one hour, including the 30 min. baking time.

At last I asked the internet what Topfenknödel are — and was surprised they were sweet as you often make them for lunch. I approve of sweet lunch. Or dinner. Or dessert. :)
