This is the second day that I haven't left the house. At all. Hell, I haven't even left the flat! At least Mum took out the garbage bin and checked the mail. Well, I did open the window and did a few exercises. For about two minutes.

But I was busy nevertheless. Firstly, I tried out a new, quick and easy recipe:



It's called a Ratz-Fatz Kuchen - a German recipe, the English equivalent would be "rapid cake". I made it with ground orange peel and cocoa powder instead of vanilla sugar an little chocolate chips. The icing is white chocolate. It's really yummy.

Then I've sewn in another two pages of the quiet book. Only two more to go, plus the spine of the book and the buckle for closing the book. Yay!

I also did a bit of translating and transcribing. Not much, mostly because I felt a bit lazy. And I talked on the phone to three different colleagues, which was grand.

Here you are:

Ratz - Fatz - Kuchen (schneller, lockerer und wandlungsfähiger Rührkuchen)

Zutaten für 1 Portion:
120 g Weizenmehl
40 g Speisestärke
3 TL Backpulver
150 g Zucker, feine Körnung
1 Pck. Vanillezucker
150 ml Öl (z.B. Rapsöl)
150 ml Milch (3,5%)
3 m.-große Ei(er)

Mehl, Speisestärke, Backpulver, Zucker und Vanillezucker in einer Rührschüssel mischen. Die Eier leicht verquirlen und zusammen mit der Milch und dem Öl zu den trockenen Zutaten geben. Alles mit einem Schneebesen zu einem glatten und dickflüssigen Teig verrühren. Den Teig in eine vorbereitete Kasten- oder auch 26er Springform füllen und glatt streichen.

Die Form in den vorgeheizten Backofen bei 185°C schieben und auf der zweiten Schiene von unten für 30 bis 35 Minuten backen.

Eine Variante für Nusskuchen: Zusätzlich 100 g gemahlene Nüsse unter den Teig heben. Zum Schluss eventuell mit Nougat überziehen.

Eine Variante für Schokoladenkuchen: 2 EL Kakaopulver zu Beginn zusätzlich zu den festen Zutaten geben und untermischen. Als letztes 75 g Schokotropfen unter den fertigen Teig rühren. Nach dem Backen kann der Kuchen noch mit einer Schokoladenglasur überzogen und nach Belieben verziert werden.

Arbeitszeit: ca. 20 Min.

No problem. Here is it in English:

Rapid Cake (quick, easy and adaptable)

Ingredients for 1 cake:
120 g wheat flour
40 g food starch
3 teaspoons of baking powder
150 g fine granulated sugar
1 package (20gr) vanilla-flavoured sugar
150 ml vegetable oil
150 ml milk (3,5%)
3 medium-sized eggs

First, mix all dry ingredients in a bow. Then mix eggs, oil and milk and add to the dry ingredients. Stir until you get a thick, liquid consistence. Pour it into a baking tin (square or round - the latter 26 cm diameter) and smooth the surface with the back of a spoon or a knife.

Bake the cake on the middle level of a pre-heated oven on 185°C for 30-35 minutes.

Nut-cake version: Add 100 g ground nuts of your choice to the dry ingredients. You can ice the finished cake with nougat.

Chocolate cake version: Add 2 tablespoons of unsweetened cocoa powder to the dry ingredients and 75 g chocolate chips to the dough right before baking. You can decorate the finished cake with chocolate icing.

Have fun! The entire job - without baking time - takes about 20 minutes.

Looks delicious! I have never heard of vanilla flavoured sugar, or for that matter, food starch. Is food starch similar to corn starch?

Food starch is indeed similar to corn starch, only made of wheat, I think. I always use the same amount of common wheat flour, though. Vanilla flavoured sugar is icing sugar with vanilla flavour; you can buy it in small, 20 gr or 30 gr packages. But if you put some icing sugar into a tin and add a piece of vanilla to it, you'll get the same within days.
