It sounds a bit surrealistic, doesn't it? Especially as I've already been booked for the next fortnight for activities at school: 4 choir practices, 3 baking events with kids, the Christmas fair and the Christmas concert with the school choir.

And if everything goes according to plans and so God will, Mum and I are going to Linz in the middle of all this, to visit the big Christmas fairs there. Not to mention that I'll have a great deal of baking to do; I've barely begun.

Speaking of which the second batch of Spikey's Amazing Double Ginger Cookies(TM) is currently chilling in the fridge. I decided to make it today, after all, as I didn't want my delicious, home-made apple sauce to go bad till the weekend.

I also decided that we'll make them with the 6th-grade group on December 18. They'll enjoy it greatly, I think.

So, busy, busy days, but I like them busy. *g*

The second batch has just come out of the oven. Mum is ecstatic.
I just wish I had a decent oven, not this gas-fuelled derelict where I only have two settings, high and low. Trying out a new recipe and find the right degree of heat is always an adventure. Plus, the stupid thing tends to burn the bottom of the cookies and leave the tops way too pale. I have to watch it like a hawk all the time and it still manages to outsmart me sometimes.

next time you might try lining your pan with parchment - that's helped mine out considerable.
