Ingredients:

200 grams of flour
20 grams of margarine
150 grams of sugar
8 tablespoons of honey
1 egg
1 eggyolk
1 teaspoons of bicarbonate of soda
1 pinch of salt
gingerbread spices (cinnamon, cardamom, ingwer, piment, whatever you want, or a ready-made mix), as much or as little as you like

How to make it:
- mix the ingredients and knead them until your dough is smooth;
- let it chill in the fridge for an hour, preferably wrapped in tinfoil;
- roll out the dough, about 1/2 cm thick, cut out any shapes you like;
- bake it in the pre-heated oven until light brown.

Unfortunately, the recipe doesn't give the temperature or the time of baking, but this kind of cookie usually needs 180°C and is done in 10-12 minutes. When the edges are getting brown, you know they are ready. It isn't absolutely necessary to chill the dough, but I found that it makes it easier to handle it. Theoretically you can roll it out as soon as you've kneaded it.

You can decorate the cookies with icing sugar mixed with a little bit of lemon juice. Don't make it too thin - add just as much juice that you can handle it with a thin brush, or else the icing will drop from the cookies. As you could see on the picture in my previous post, that happened to me in some places.
