It has been raining, with strong winds, last night and today in the early afternoon. The dratted balcony was leaking AGAIN! After all the work and money and "experts", we are back to tinfoil and plastic foil and plastic buckets. Will this ever end? One of Mum's acquaintances promised to send another "expert" to us who might be able to help. Frankly, I'm not really believe it anymore.

Otherwise, it was another eventful day. I made the vol-au-vents, made the sardine filling (of course, the website with the recipe I wanted to modify according to my resources had just crashed when I tried to revisit it, so I had to improvise) and made the Easter bread. It isn't as nice and smooth as on the picture of the recipe, but again, it never does. So far it has always been delicious, though, so I hope it will be this time, too.

The aforementioned two items left me with an excess of five egg whites. Now, considering how expensive eggs are at the moment (like just everything else, really), there was no way to throw them out. We don't particularly like meringue, so I decided to give Mary Berry's Angel Food Cake another try. This time it actually turned out great. See here. Now, Mary Berry usually covers the whole cake in royal icing, which, again, we don't like, so I decided to simply cut it diagonally and fill it with lemon curd, putting the other half of it on top of the cake and decorate it with mini marshmallows. Mum really liked the results.

After lunch I managed to write a tiny bit and even forced myself to cut out the outer layers of the little pincushions. So I'm fairly content with my achievements.

The cake looks quite yummy. I've heard of people eating egg white omelettes, although they don't sound very tasty to me.

Yes. The rain has to come from a certain angle, combined with strong winds. Still, no-one could find the exact point where the rain comes in so far.

I don't think I would like royal icing on an Angel Food Cake — your choice of lemon curd sounds much better.

I have 3 spare egg yolks and am going to make an egg yolk sponge in the morning — we made meringues as part of the children's lesson in church this morning. (I must post about it — it sounds weird otherwise!)

Well, it turns out I was an idiot and misremembered things: it was a thick layer of whipped cream, not royal icing. But I didn't have whipping cream in the house anyway, and besides, it becomes soft too quickly, so I think the lemon curd was the best solution. That way I didn't have to put the cake into the fridge (where I wouldn't have any free space to begin with).

I don't make angel food cake very often because it's a pain in the butt to make and not everybody likes it but when I do make it I don't put icing on it.
