Hectic day

I started my day with making the dough for the Baci de Dama because it needs to chill in the fridge for two hours before you can shape it. In those two hours I took Mum down to our café and we had breakfast. Afterwards I hopped down to Lidl because I realized we didn't have enough milk and bread in the house, and as a result I came home with three shopping bags full of stuff. *insert rueful look*

Then I shaped my biscuits and put them back into the fridge for another hour. While they peacefully chilled in front of themselves, I made the pizza sauce, the tuna topping (complete with sweet corn and tomatoes), which I then put into the fridge in well-closed plastic boxes.

After this I finally put my biscuits into the oven and melted a mix of leftover nougat cream and dark chocolate to glue two of them together when done and cooled. Only that they looked clumsy and ridiculous that way, so after the first few pieces I simply dropped some nougat icing on top of each biscuit, and they looked much better that way.

Mum made the spinach, with lots of garlic, and I made the spanakopita afterwards. I used a Paul Hollywood recipe for the filling, which, I think, was a mistake. The recipe required mint, which I added, after finally having found some in the supermarket, but Mum and I both decided that we preferred spanakopita (which I had made before in a rather spontaneous way) without the mint, so that we can actually taste the spinach, garlic and Feta cheese in it. I only added two small pinches of mint, but that was clearly two pinches too much, at least for our taste.

I also grated the cheese for tomorrow's savoury scones that are best freshly made. That way I won't be completely dead, when my guests arrive - assuming that they do show up. Two of them have already cancelled, for completely legitimate reasons (one has to help out with the newly born granddaughter and the two-year-old, rambuctuous grandson, the other one is ill and in bed with a fever and without any speaking voice), and I can't be sure how many of the rest of them will actually show their faces. :(

So yeah, I'm pretty tired, and the work still isn't done. Scones and two kinds of mini pizzas have to be done freshly, meaning that I'm gonna have an early start tomorrow, too.

Note: Another person has just cancelled. I think I'll give up the idea of parties in the future. It's just too disappointing.

What a pity about your guests. Could you freeze some of the already prepared food so that you and Mum can feast in future? Also, that spinach sounds yummy.

Yeah, the plus side is that I won't have to cook for days to come. Still, I'd have preferred my guests coming and eating all the goodies.

I love spanakopita! I’m with you on the controversial mint issue. Some people claim it’s just not spanakopita without the mint. Melbourne has a large Greek population, so spanakopita is a staple here. Your guests are fortunate, the menu sounds delicious.

Oh my goodness you have been busy! I do hope the rest of your guests arrive and appreciate all your work.

I don't think mint really belongs in spanakopita, either.

Fortunately, the strong mint taste was gone by the time the spanakopita cooled, and we enjoyed the results very much.

I hope that at least some guests will be able to enjoy the food you have been preparing- you have put a lot of work in it!
