Baking Frenzy, take three
Nov. 19th, 2021 07:16 pmI've baked the cookies that weren't made yesterday, and they turned out well enough. I also decorated yesterday's disastrous marshmallow cookies - spreading molten chocolate on the underside did the trick and hides a great deal of sins. Everything is better with chocolate, right?
Today I made the Princess Krapfens (marzipan and coconut ones), maple-pecan cookies, caramel-pecan cookies and - instead of the originally planned Ingwerkrachers - almond-orange Financiers. Both are made using the egg whites only, and I no longer had the nerve to struggle with the meringue. Financiers are easy, yummy and idiot proof - and you need only half the amount of sugar into them that the meringue would require.
Tomorrow I'll decorate the Financiers and the caramel-pecan ones (the others don't need any additional decoration), and then I'll take a break until next Wednesday. We'll see how my arm will work after the booster shot, which is due on Tuesday. But I'm eager to be done with the cookie phase and go over to the actual biscuits, where the dough is rolled out, cut into different shapes, and the finished biscuits are either filled or richly decorated or both.

Date: 2021-11-19 06:57 pm (UTC)Das Grundrezept ist sehr einfach: Eiweiß, 60 gr gemahlene Mandeln (oder was für Nüsse Du bevorzugst), 100 gr Puderzucker, 20 gr Mehl, 60 gr aufgeschäumte Butter.
Die Methode ist auch idiotensicher. Zuerst verrührt man die trockenen Zutaten mit dem Eiweiß (es braucht nicht aufgeschlagen zu werden), dann unterrührt man die noch heiße Butter, füllt das ganze Zeug in Förmchen und bäckt zuerst für 5 Minuten auf 240°C (in Theorie — mein Backofen geht nich höher als 200), dann reduziert man die Hitze auf 200°C und bäckt sie für weitere 10-12 Minuten. Und das ist alles.
Du kannst die Dinger mit alles Mögliche bereichern; diesmal habe ich einfach geraspelte Orangenschale und ein bißchen Orangen-Aroma dazugeben. Aber Raspelschokolade geht auch, sowie kleingehackte Kandierfrüchte oder was auch immer auf dem Regal herumliegt.
Angeblich gibt es spezielle Financier-Förmchen. Ich mache sie immer in einer Silikonform für 12 Madeleines, die Menge ist gerade richtig dafür. Aber kleine Muffinförmchen gehen auch. Allerdings sollten Metall-Backformen gut gebuttert werden, sonst kleben die Dinger an. Mit Silikonformen hast Du das Problem nicht.
