Because they might look great but they taste like sawdust.

Granted, it was an experiment. The hubby of a friend is a diabetic, and I wanted to include them into the Christmas baking. So I bought all the fancy ingredients and gave the cookies a trial run. Only that I made them with sugar instead of Erythrin (0-calory sweetener), since I wanted to save that for the real item. Which might have been part of the problem. These sweeteners are, oddly enough, often much sweeter than sugar. Ah, well, the recipients will get the version with the sweetener, so I hope they'll like it.

I was also busy crafting-wise. Behold Christmas cards #13-16:



And I cooked lunch. That was it for today. Since I've given away half the healthy sawdust cookies to the neighbours (one of whom is really into this kind of stuff, so it wasn't entirely mean-spirited from my side), I can bake some savoury cheesy buns tomorrow. *g*

I think as long s you let them know ahead of time, no one could complain about the cookies. All I managed Christmas related today was printing off labels. I've got my international cards written, now to mail them!

I think the cookies will actually be much better with Erythrin. But they know they're going to get them; I even sent pictures. Of course, the things do look great...

I'm planning on mailing my international cards next week. They're finished, all I need to do is to pilfer some envelopes from Mum, as she always has some. ;)

It's nice when you can give failed experiments to someone else.
I don't really like any of the artificial/alternative sweeteners because they're so much sweeter.

Hehe! So true. My sister is a diabetic and she bakes, but it took her a long time to figure out how to make her baking appealing. She has it down to an art form now, but some things just don’t adapt. Biscuits are hard to transform - she tends to make cakes, muffins etc.

Oh, after all that work, what a disappointment. They really do look good! I hope the version with the 0 calorie sweetner will turn out!

A couple of years ago I experimented with gluten free and keto baking. I was just experimenting, not needed for any health requirements.

On the whole, I didn't have very good results. But I remember the keto desserts were better than the gluten-free ones. And that is because of my lack of skill, and not the quality of the recipes, because online reviews of the recipes were quite favorable:D

You shouldn't always trust the online reviews. Some people are just snobs and wouldn't admit that they don't like something that's considered "cool".

What is keto baking, BTW?

Haha, I have found some reviews that are just wrong:)

Keto baking involves very low carb ingredients. So lots of cocoa and fats, and 0 calorie sweetenrs, almond flour.

The cookies do look pretty. My son is cooking his own breakfast these days - artificial french toast. He makes it using no milk, only egg whites, cinnamon and lots of artificial sweetener. Then he tops it off with artificial sweetened syrup. It tastes super sweet and super artificial (nasty, to me), but he is on a "build up my muscles with minimal body fat" kick. So yeah, your sawdust cookies will most likely taste much sweeter with the artificial stuff. For those who are used to the taste, I imagine they will quite happy.

They'll go to M, eventually, whose husband is a diabetic. So I guess it will be okay for them.
We, on the other hand, rechristened the things to "horse droppings", because of the looks of them.
