Since I didn't really manage to do much today. Whenever Mum and I go somewhere together, it costs me half the day. Not that I'm complaining; she is great company, has just slowed down considerably in recent years.

Anyway, let's start with today's dinner, which was layered crepes with spinach filling. Looks like a cake, doesn't it?

It is a great combo, my friends ask for it whenever I throw a party. The best part is: you can make them a week earlier and freeze them. On the day of the party you can simply thaw them out and they are as if they'd been freshly made. In that case it is eaten as a cold dish, of course.

The truth is, I'd be a lot faster on my own, but I have to accommodate Mum's current speed, which is why I have so little time for what would require peace and concentration. Like writing. *sigh* Still, it is a blessing to have her with me; I hope for a long time to come yet.

The spinach crepes look delicious! Did you make the crepes yourself or are they pre-made and you add filling? Love the Russian dolls.

Yes, I made them myself. Usually Mum makes the batter and I fry them in about half an hour or so. It looks more difficult than it really is.
