And here's the next one: Orange-Almond Biscuits

Ingredients:

75gr butter or margarine
3 eggwhites
120 gr icing sugar
120 gr ground almonds
grated peel of 1 orange
1 pinch of salt.

For the decoration: icing sugar

How to make it:

* pre-heat oven to 200°C
* melt butter (margarine) and allow it to cool a bit;
* wash the orange hot, rub it dry and grate the peel;
* beat eggwhites with 30 gr icing sugar and a pinch of salt;
* mix almonds, the rest of the sugar, the orange peel and the 3rd eggwhite thoroughly;
* add beaten eggyolks carefully;
* fill the mix into paper muffin forms (5 cm diameter) to 2/3 high;
* sprinkle the biscuits with icing sugar;
* bake them for 15-20 minutes;
* let them cool on the tin completely

In a well-sealed tin box, these biscuits remain fresh up to 2 weeks.

Yep, they're very good. This is the first time I tried out this recipe, mostly because I felt it a criminal waste to throw away the whites of the eggyolks used to the marzipan bretzels (even eggs are expensive over here), so I needed something where only the eggwhites were required.

The orange peel, together with the almonds, gives the biscuits a nice, spicy, slightly bitter taste that the kids didn't like too much, but most adults were simply blown away.

If you need to use up egg whites you could always make meringue nests filled with candied and/or dried fruits and nuts. Thy are very pretty and very yummy too! The nests are simple vanilla meringues that are piped into a nest or basket shape and then baked. After they cool you fill them with your favorite candied and/or dried fruit and nut mixture and drizzle them with a bit of treacle/honey/chocolate (whatever you prefer) before serving! They also hold up well to freezing if needed.

I never manage to make proper meringues, I'ma fraid. They always turn out like dead jelllyfish. :(
