I actually managed to make dulce de leche by simply boiling a tin of sweetened condensed milk for three hours! I didn't really believe that it would work - it seemed too easy - but it did. Next time I'll perhaps boil the stuff half an hour less; a somewhat thinner consistency would have been better, but even so, it worked, and my alfajores cookies are absolutely delicious.

I also made the remaining two biscuits; all that's left to do for tomorrow is a bit of decoration. I'm accordingly dead on my feet but so happy to be done!

The muse clearly appreciated the end of the baking frenzy because she inspired me to write a page and a half last night and this afternoon, respectively. Success!!!

I buy dulce de leche at my favourite grocery shop- not exactly cheap, but less work!

Yep. Place the tin in a pot, pour enough water into the pot to cover the tin and leave it to its own devices. The only thing you need to do is to make sure the tin is always covered in water.

I haven't seen it in any of our grocery shops, but the 'boil the tin' method isn't a lot of work. The only thing you make sure to happen is for the tin to be completely covered in water all the time.

I've done this a long time ago, when I could not find the product in the shops. Now caramelly condensed milk costs exactly the same as condensed only- so no waste of electricity here!

Yeah, I can see that would be expensive with an electric oven. We've got a gas oven and pay a fixed gas bill; not that I'd be wasteful with it.

For some reason S2C and I had a long conversation about making dulce du leche that way last night. I can vaguely remember my mother doing it for some reason, before we had ever heard the term dulce du leche — I think it was just called 'toffee sauce' when she made it.
