I already told you about my Speculaas creme that turned out a total failure. It was too hard for a filling but not smooth enough for rolling out. So I decided to shape flat little cookies by hand and bake them in the oven. They came out in the usual "ugly but yummy" state, so I dripped some chocolate icing over them. And they are excellent that way, as long as one doesn't try to bite through them. I think I'll add a warning to the cookie boxes I'm giving away this year. *g*

Other than improvising cookies and refilling the Stempelkekse with cocoa-hazelnut spread, I also boxed the finished biscuits, made an extensive food run in the morning (the fridge was empty), cooked lunch (mushrooms-and-eggs, which is the same as ham-and-eggs, only with mushrooms), managed to write a full page and talked to my friend Evie on the phone.

I also put together tomorrow's baking plan. I had to be creative with that one, as I can't bake anything that requires more than a single egg or no eggs at all. The plan had been for my friend Elise to come over today and contribute some eggs, margarine and ground nuts to the baking frenzy, but her youngest grandchild got ill and she had to run out to her son's family to be dutiful Grandma. Had I known that in advance, I'd have cooked something else. As it is, there are very few eggs in the house at the moment, so I'll have to maneouvre very carefully for a couple of days. Buying more wouldn't make sense, since Elise will eventually bring them, but until then, it will be... interesting.

I so would love to see the bottom of my fridge, but hubby is grocery shopping too much :( I hope that your friend will be able to bring the eggs as soon as possible. Looking at your baking list I think there aren“t many vegan recipes on it!

It probably was. However, mushrooms-and-eggs is an old favourite in our family, and considering what mushrooms cost in these days, not a cheap dish, either.

No, I don't do vegan; not consciously in any case. But a great many biscuit recipes consist of sugar, butter and flour only, evtl. with additional spices or nuts. I do use margarine instead of butter, though, simply because it's still cheaper.

I love eggs, plain, or with ham, mushrooms, cheese, rice, whatever. Unfortunately, my husband will only eat them for breakfast. He is weird like that about certain foods.
