Soul cakes

Meaning the ones [livejournal.com profile] sallymn found the recipe for. They sounded fun, so I gave them a try. These were the result:



They don't look spectacular, do they? Unfortunately, they won't fit the category "ugly but yummy". They are rock hard and taste of cardboard. So, this was an experiment I won't repeat. Not a chance for them to get onto my Christmas baking list.

Other than that, we had laundry day, I finished two more lavender-infused little pillows, got an idea for quick and easy ornaments to make in the last moment and took Mum out for a walk.

Oh, and I made ginger syrup! I buy fresh ginger from time to time, grate it and freeze it in small portions, so I only have to take out one and throw it into the pan if I need it for various dishes. There's always so much juice left after the grating process, and it would be a shame to waste it. So I added a generous amount of sugar and honey, boiled the mixture for a while and then poured it into a small flagon. Now I have delicious (and very hot) syrup to add to tea, should I get a cold, or to various cakes. :)

That's strange. The recipe I found needs lots of spices. But since I decided to do only a bit of Christmas baking this year, I do not have to agonise over new recipes.

Oooh. Ginger syrup sounds yummy for tea. I turn to lemon and ginger tea whenever I feel ill in any way. There's something so comforting about it.

To me those look like chocolate chip cookies, but too bad they didn't taste anything like!


I love the taste of ginger, so the syrup you made must be delicious. I never thought of making some myself, but I should try.

As you probably already know, I hate tea with a passion. I only drink it when I have a cold. And in those cases the ginger syrup in the tea is a great help.

There are probably more official ways to make ginger syrup, but I just put the ginger juice on the heat with a few teaspoons of sugar and a generous amount of honey and boiled it until it got a slight golden colour. Then I poured it into a bottle and put it into the fridge when it was already cold.

They look good, sorry they did not turn out well. As to ginger, the one time I tried to grate fresh ginger, it was like I turned on a tap. My sinuses streamed non-stop and I was coughing and almost choking. I had to stop and threw the ginger out. I must have an allergy to ginger, although I have eaten dishes that contain ginger many times with no reaction — wierd. I have never tried to grate fresh ginger since. Too bad, as I was trying to make carrot soup with ginger. I used dried ginger and it worked, but wanted to try fresh.
