I've baked the cookies that weren't made yesterday, and they turned out well enough. I also decorated yesterday's disastrous marshmallow cookies - spreading molten chocolate on the underside did the trick and hides a great deal of sins. Everything is better with chocolate, right?

Today I made the Princess Krapfens (marzipan and coconut ones), maple-pecan cookies, caramel-pecan cookies and - instead of the originally planned Ingwerkrachers - almond-orange Financiers. Both are made using the egg whites only, and I no longer had the nerve to struggle with the meringue. Financiers are easy, yummy and idiot proof - and you need only half the amount of sugar into them that the meringue would require.

Tomorrow I'll decorate the Financiers and the caramel-pecan ones (the others don't need any additional decoration), and then I'll take a break until next Wednesday. We'll see how my arm will work after the booster shot, which is due on Tuesday. But I'm eager to be done with the cookie phase and go over to the actual biscuits, where the dough is rolled out, cut into different shapes, and the finished biscuits are either filled or richly decorated or both.
