I didn't have much on my to-do list today, so I decided to use up the bananas that were getting overripe and some of the eggsies, since I'll fetch the next batch tomorrow anyway. What came out of it was Grandma's idiot proof sponge cake with dark chocolate cream (made of an old pudding powder I found on the shelf), bananas and a bit of red currant jam.

Here it is:

Other than that I did a bit of paper embroidery, washed up a lot (eating leftovers don't relieve the house elves from washing up), talked to my friend Eenie on the phone, solved a few crossword puzzles and watched some telly. The big telly program - the finals of the VIP edition of the Great German Bake-Off - is starting after 8pm.

That looks good. I do like a chocolate cake. I would like it with the bananas, but I know Paul wouldn't eat it — he doesn't like fruit with chocolate; he's weird that way.

It isn't everyone's cup of tea, apparently. The sponge cake itself doesn't consist cocoa or chocolate, actually; just eggs, flour and sugar. Usually, when I make a sponge cake with fruits, I use vanilla pudding for topping, but this chocolate one was overdue for consummation, so I gave it a twist. Err... I know the British understand by pudding something else, right? What we call a pudding is in fact a thick cream, made with the help of a powder that we just mix with sugar and boiling milk until it thickens properly.

Pudding to us is a whole class of sweet food, not to mention it's other use to mean a steamed savoury dish made from a suet pastry! I would call what you describe as a custard, because most Brits don't make custard with milk and eggs and sugar, but with custard powder, sugar and boiling milk. When I was young any flavour other than vanilla was usually called blancmange (which is weird when you think of chocolate blancmange, or raspberry), but these days you will see it sold in packets as 'chocolate custard powder'.

We make fatless sponges sometimes, my mother always referred to it as an 'egg sponge' as it was the egg that provided the raising, but for most of us our default is the Victoria with equal weight of self-raising flour, sugar, eggs and butter, and the variants thereof, like the chocolate or coffee versions.

Interesting. For a very long time, sponge was equivalent with Grandma's recipe for me; I was almost shocked when I learned that there are sponge recipes that actually contain butter!*g* Grandma really despised baking powder, soda and the likes. She kept saying that if one puts the required amount of eggs into a sponge dough (with the whites properly beaten), one needs no other raising agent. Of course, I do use baking powder for the heavier doughs now.

The cake must be delicious, with all those yummy ingredients. Chocolate and bananas is such a good combination.

I should tell you, also, I have just looked at your beautiful easter egg cards from the past several days, and I love them!
You are so talented! Crafting has a double pleasure — it brings peace of mind as one crafts away, and the finished products are treasures!
Best wishes to you and your Mum! Be well! And enjoy the Great German Bake-Off! (I've been re-watching The Great British Baking Show S3 when I fold laundry:)
