Aka ginger meringues. Because we had a leftover egg white and we try not to throw out any food as long as it can still be used. So, here are my very economical little... things. Just an egg white, 100 gr sugar, 1/2 teaspoons of lemon juice and 1 teaspoon of grated ginger. Oh, and I added half a handful chopped cranberries on my own, to make them prettier... not that they'd have turned out visible, after all. *g*



Since meringues keep infinitely, I put them into a tin box and on the shelf for Christmas. We did sample them, of course, and the ginger counteracts the sweetness rather pleasantly.

Other than that, I did a bit of writing, a bit of translating, chatted on the phone with two friends... all in all, a pleasant day.

We usually just make scrambled eggs with a bit more egg white ... haha ... Or fried eggs as I like the white there more anyway.

I usually combine the Plätzchen that require only the egg yolks with those that require only the egg whites and bake them that way. Nothing goes to waste, and we have more cookies. *g*

Problem is that Makronen usually are something you bake because you have to use those egg whites and nobody really likes them.

They are very resilient, unless they get wet. In fact, I've got meringue Christmas ornaments that had seen Grandma, and she's been dead for twenty-four years. Of course, after a while they become stale and I wouldn't eat them but as decoration they keep forever, as long as kept dry.

Yes exactly, you can make them thinner and then put two together with Nutella in between them, a bit like Macarons. :D
Ach, there are many beautiful ways to make them.
