Behold my walnut-carrot cookies!

White version:



Green version:



They are basically the same cookies, just the decoration is different. I think the green ones are prettier.

This recipe is a bit detail-heavy, what whit roasting the walnuts first and the carrot grating and whatnot, but I'm content with the outcome.

Other than that, I had two long phone chats with friends (and a third one in the queue), cooked lunch... and the day was practically over.

Oh dear - that sounds to complicated to bake for me. Not that I couldn't do it, I'm just too lazy. Haha!

It isn't really complicated, once you've made the dough. It's just the little details in the preparation that are time-consuming. But yeah, I'll think twice before I make these again. Perhaps I can freeze a few of the green ones for the Christmas spread.

The original recipe asks for cashews but I didn't want to experiment with such insanely expensive ingredients. Walnuts aren't exactly cheap, either, but still cheaper. And the taste is very similar, I find.

Well, they are the same. The only difference is the colour of the icing. I regret not having made all of them green, though.

They look quite festive and delicious. I think the green ones stand out. The others are pretty, just pale in comparison to the more intense green. A plate of the red, yellow, and white by itself would look quite nice.
